Vegetable Bake

6 eggs

1/4 cup olive oil

1 cup SR flour, sifted

1/2 cup grated parmesan cheese

1 carrot, grated

1 zucchini, grated

1 onion, finely chopped

1 cup pumpkin cut into 1cm cubes

1 cup chopped broccoli florets

1/2 cup chopped soft mixed herbs - parsley, basil, mint, oregano, thyme

Preheat the oven to 190C. Grease and breadcrumb a 20cm square baking dish.

Whisk eggs, oil and salt and pepper together in a jug. Combine remaining ingredients in a large bowl. Add egg mixture. Stir to combine.

Spoon into prepared dish. Smooth surface. Bake for 40-45 minutes or until golden and set. Stand for 10 minutes. Serve hot or cold.

Christmas holidays

Mum has organised our christmas holidays

A week in morocco.  A small surfing village called Agadir.  Looks very relaxing.  

House pictures above! I hope it is this nice in real life.  House comes with a moroccan cook... should be interesting.  Hoping to have some impromptu cooking lessons from the cook.  I can't wait to sit around on the deck lazily and maybe walk to the beach.. or probably just be a complete sloth for one week!

Then 2 weeks skiing in Cortina D'Ampezzo, Italy. I can't wait to get back to Italy and eat, eat eat! (maybe do some skiing)

Well.. not too long

Aiming for under 30 mins.  Finished in 29:22.  Pretty good

The good thing about the rain is the clouds keep in the warmth.  It has been more bearable for the last day
